Fava bean soup

How to prepare:
Heat the oil in a 6-quart pot over medium-high heat. Add the onion and garlic and saut until the onion is golden. Add the beans, squash, stock, tomatoes, bacon, herb seasoning, and vinegar. Cover and bring to a boil. Reduce the heat and simmer until the squash is tender, about 15 minutes. Taste and season with salt and pepper if needed. Serve with corn bread and cole slaw. Enjoy!

- 1 tsp.olive oil
- 1 medium onion, chopped
- 4 cloves garlic
- 1 cans (14-ounce) fava beans, rinsed and drained
- 1 medium yellow summer squash, chopped
- 2 3/4 cups beef stock
- 2 cups diced plum tomatoes
- 4 oz. Canadian bacon, chopped
- 1 tsp.Italian herb seasoning
- 1 tsp. red wine vinegar
- Salt and pepper to taste
