Cornflake chicken tenders

Ingredients:

Balsamic vinaigrette
  • 1 lb. boneless chicken breast or chicken breast tenders
  • 2 cups cornflakes cereal
  • 1 egg slightly beaten
  • Seasoning salt to taste
  • 1/8 tsp. garlic salt *optional
  • 1/8 tsp. onion powder
  • 2 T. oil or margarine


How to prepare:

Crush the cornflakes with a rolling pin in a Ziplock bag. Cut chicken breast into thin slices. (Slightly frozen breast slices nicely.) Dip slices in beaten egg mixture and coat with the cornflakes. Place in greased pan. Cook approximately 25 minutes or until the underside is brown. Turn and cook 10 minutes. Serve with tater tots and green beans. Enjoy!
