Mid Week Pot Roast

Ingredients:

  • 1 1/2 lbs. beef roast
  • 1/2 teaspoon black pepper
  • 2 garlic cloves
  • 1/2 package onion soup mix
  • 2 teaspoon Worcestershire sauce
  • 1 teaspoon steak sauce
  • 3 carrots
  • 2 celery stalks
  • 1 green bell pepper
  • 1 yellow onion
  • 1/2 cup water
  • 1/2 cup tomato juice


How to prepare:
 
Brown beef in a little oil on all sides. Slice onion and separate into rings. Dice the carrots and celery and slice the peppers into thin strips. Place the vegetables in the bottom of slow cooker.

Sprinkle the beef with fresh ground black pepper, minced garlic and the onion soup mix. Place the meat on top of vegetables. Mix steak sauce and Worcestershire sauce in a small bowl with about 1/2 cup of water and 1/2 cup of tomato juice and pour over meat. Turn the slow cooker to high for 30 minutes. Then turn to low and cook for 7 to 9 hours. When ready remove the vegetables with a slotted spoon. Turn the slow cooker to high and thicken liquid with a little flour or cornstarch. Serve with mashed potatoes. Enjoy!
