  • 1 4- to 5-lb. bone-in pork loin roast
  • 1 fennel bulb
  • 12 cups panko bread crumbs (find in the ethnic aisle)

  • 1 can chicken stock

  • parmesan cheese
  • 4 6- to 8-oz. boneless skinless chicken breasts
  • 2 fennel bulbs
  • 12 oz. cherry tomatoes
    mascarpone cheese
  • 8 oz. bacon, diced
  • 2 1/2 lbs. chuck beef cut into 1-inch cubes
  • 1 lb. carrots
  • cognac or brandy
  • 1 750 ml. bottle dry red wine
  • 1 can beef broth
