Cilantro lime beans

Ingredients:

1 cup brown rice (2 cups cooked)
1 15-oz. can black beans
1/2 cup fresh cilantro, chopped or minced
juice of one lime
1/2 T. ground ginger
1 small yellow onion, chopped small
1 T. olive oil



How to prepare:

Steam rice for 45 minutes. Saute onion in a pan with oil until slightly translucent or slightly browned.

Put beans in a pot with the onion, cilantro, ginger and half of the lime. Let it simmer on medium for 10 minutes or so; you may want to add a little water if it gets dry. When heated thorough and the beans are soft, take off heat and add the rest of the lime juice. Mix in with the steamed rice. Serve with a salad. Enjoy!
