Breakfast for Dinner Western Omelet

Ingredients:
 
  • 1 to 2 Tbsp. butter
  • 1/2 cup smoked ham, finely diced
  • 1/2 cup green peppers, finely diced
  • 1/2 cup onion, finely diced
  • 3 eggs
  • 2 Tbsp. milk
  • salt and pepper to taste
  • cheddar cheese, grated or thinly sliced
How to prepare:
 
Melt butter in medium-size skillet. Saute ham, peppers and onions until vegetables are tender; set aside. Heat omelet pan or skillet. Add small amount of butter; coat bottom and sides of pan. Beat eggs, milk, salt and pepper until blended. Pour into omelet pan and cook until eggs are set. Spoon ham and cheese mixture over center of omelet and fold over, envelope-style, to hold in filling. Transfer to serving plate. Serve with hash browns and toast. Enjoy!
