Ricotta & Tomato Penne Pasta

Ingredients:

  • 2 cans diced tomatoes
  • 8 basil leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 1 cup  ricotta cheese
  • 1/2 tsp marjoram
  • 12 oz penne pasta, cooked according to package directions
  • 1/4 cup Romano cheese, grated
  • 2 large garlic cloves, peeled and chopped
  • salt to taste
  • fresh ground black pepper to taste
  • fresh parsley, chopped

How to prepare:

Combine tomatoes and 1/4 cup of olive oil, basil and garlic together in a bowl. Blend ricotta cheese with marjoram; season with salt and pepper. Toss tomato mixture in a hot skillet. Once mixture is hot, stir in ricotta cheese mixture. Add pasta and blend thoroughly. Sprinkle Romano cheese over the pasta. 

Serve with a tossed salad and Italian bread. Enjoy!
