BBQ Meat Loaf with Ranch Mashed Potatoes

Ingredients:

  • 1 1/2 pounds lean (90 percent) ground beef
  • 3/4 cup quick or old fashioned oats
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped onion
  • 1/2 cup barbecue sauce, divided
  • 1 egg
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

How to prepare:

Preheat oven to 350 degrees. Combine ground beef, oats, green pepper, onion, cup barbecue sauce, egg, thyme, salt and black pepper. Mix lightly and thoroughly. Shape meat mixture into loaf in a loaf pan. Bake 50 minutes.

Spread the remaining 1/4 cup barbeque sauce over meat loaf. Bake an additional 10 minutes. Remove from oven and let stand for 10 minutes before slicing. Serve with ranch mashed potatoes and green beans. Enjoy!


Ranch Mashed Potatoes

Ingredients:

  • 1 packet (1 oz. ranch dressing mix)
  • 4 cups unsalted mashed potatoes, with or without skins

How to prepare:

Add dressing mix to potatoes along with butter or margarine and milk; stir well.
