Tomato Chickpea Toss

Ingredients:

  • 1 15-oz. can chickpeas
  • 1 large tomato, chopped
  • 3 whole green onions, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt

How to prepare:

Rinse and drain chickpeas. Place them in a bowl. Add the tomatoes and onions. Whisk remaining ingredients together. Toss with chickpea mixture until coated. Serve over rice. Enjoy!
