Garbanzo Beans and Rice Bake

Ingredients:

  • 1/2 onion, chopped
  • 1 teaspoon cold-pressed olive oil
  • 2 garlic cloves, chopped
  • 2 1/2 cups cooked long-grain brown rice
  • 3/4 cup cooked or canned garbanzo beans
  • 1/2 cup sliced black olives
  • 1 tablespoon soy sauce
  • 1 tablespoon nutritional yeast (optional)
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano

How to prepare:

Preheat the oven to 350F. In a skillet, saut the onion in the olive oil until golden. Add the garlic and cook for 1 minute. Mix all the ingredients well in a large mixing bowl and place in a lightly oiled casserole dish. Bake for 35 minutes. Serve with a green salad and lightly steamed greens or vegetables. Enjoy!
